I don't know why I resisted canned chickpeas so long.

The dried ones are best for making falafel though. You want the crunchy texture in your patties.

I tend to use canned beans for most of my recipes. Easier and I'm not a purist when it comes to such things.

I stopped buying canned veggies (corn and peas) that I used to stock up on in favour of bags of frozen veggies a while back. I guess I just thought it was healthier. :)

I don't like all the salt they added to the canned veggies. I do keep a can of peas on hand though, in case I make Pete's Peas. They only work with canned peas.

A can was the perfect size for 2 servings or to put in a chicken pot pie in the case of peas. I would drain the contents and quickly warm them up in the microwave. No fuss no muss. And I didn't have to go digging in the freezer for the bags which always ended up at the bottom. I no longer worry about the latter these day, I guess.

They are convenient, but I have to keep an eye on our sodium intake, so it's mostly fresh for us.

Fresh doesn't really work for me ... I suck at timing and fresh vegetables OFTEN end up pitched cause they're bd by the time I get to them. It happens to strawberries too. :(
