Things are in rest mode for me this weekend.
We were lucky to have two rain free days with a bit of sun but rather than going out and running errands (I need to get my hair cut and pick up some dried chiles at the Mexican grocery store), I stayed home and dug into my freezer for meals.
For the second weekend in a row, I barbecued ... three pork chops and I put a bit of colour and smoke flavour on a couple of baked potatoes that were cooked in the microwave. All 'good'.
While doing three loads of laundry in the basement, I made 2 dozen cream puffs to take to work with me on Tuesday as I already have a job booked and promised them to one of my fellow supplies who is doing a long term at the same school. I'm filling half with pastry cream and the other half with sweetened whipping cream, although I may add some lemon curd to some of the whipped cream. I haven't decided yet.
The 'bad' is a relative term. I brough home two pounds of sweet red cherries a few days ago and decided on an easy cherry cobbler recipe I found on line. There were no reviews to refer to, which was my first mistake. I decided to only make a half recipe, baked in individual ramekins, because I didn't want to be eating the cobber every day for a week.
I tasted the cherries and they were sweet so I reduced the sugar called for for the filling ... a bit. Next time, I'd cut back on the whole recipe's sugar from 1 1/4 cups to 2/3 of a cup. Hopefully that would be enough of a reduction cause MAN was the cobbler filling sweet. Then, I messed up when measuring the butter. I forgot to half the amount. The dough seemed very dry so I added a bit more milk. I ended up with something that I had to pinch off bits to dot over the top of the fruit.
Oh well, you live and learn when it comes to baking.
