You see things like that in a professional bakery. I had no idea you could freeze starter. I wish I'd known that years ago (think decades).

That looks like a very tasty sandwich, indeed.

I thought I'd give freezing a try as I had nothing to lose if it didn't work. Of course, you can also dry starter in a thin layer on a parchment paper lined baking sheet (or a commercial dryer if you have one), break it up into shards, and grind that into powder, if you want. You can store that in the freezer or pantry as well.

With time, you can make your own and then store it until inspiration strikes. In the meantime, you can use the starter for pancakes, crackers etc. :)
