Southwestern Turkey and Corn Chowder

ETA: I had a brilliant idea for a turkey mole soup but I'm going to put it on the backburner and use the leftover mole sauce for shrimp instead. I've not decided yet whether to serve it over pasta or rice ( Read more... )

There's nothing better than a good corn chowder. I might even be able to overlook the turkey in this! It certainly is a twist on the one I usually do.

It was called a turkey/chicken vegetable chowder in the original version but I don't care for cauliflower or cabbage so I just added the corn and found the chowder to be thick enough that I didn't need to add the additional veggies called for. Especially since I only had 4 cups of stock and 1 cup of whipping cream.

The turkey was wonderful in the chowder. If you have leftovers after Thanksgiving and Christmas ... chop them up and freeze them so you can use them in this.

The green salsa gave it a great flavour that I'd not tasted before in a chowder.

We only do a turkey breast and it's long gone by now. I don't know that I've ever had a chowder with green salsa in it and was going to ask about that.

I did a chicken vegetable that was so chock full of good veggie flavor, the Big Guy didn't even realize there weren't any potatoes in it.

I'm not a big fan of green salsas though at one point I thought about making my own when I saw tomatillos at the Mexican grocery store I visit every couple of years ... cause I go crazy and buy a ton of stuff and then have to make myself use them up before I go again. :)

Anywhooo ... I bought a jar cause I thought about using it to make enchiladas. Long story short, I had it, the recipe used it and I went with it. It was good.

I like potatoes but I try for variety so I use rice, pasta etc whenever I can, as a starch. Which means that a 5 lb bag lasts a long time at my house. I had exactly 2 medium sized potatoes left so that's all I used. I might have been tempted to use more if I had had them but, on reflection, it was the perfect amount.

I'm guessing he's a big meat and potato guy and you're a not much meat and lots of veggies girl.
