Steelhead Trout 2 Ways: #2 Trout Florentine

The 2 portions of trout from the large fillet I bought were cooked using the classic Florentine (florentine = with spinach) recipe below.

I served it with Mexican style rice for a complete and very filling meal.

It's VERY tasty and not overly heavy calorie wise. I cut back on the butter used in the original recipe just a bit and you could probably reduce it even more to just a spray of cooking oil in the bottom of the baking and a tbsp or two drizzled over the top.

That's what we do - jus use a cooking spray and drizzle some melted butter over the top. You don't really need that even. I am always amazed at how much flavor this dish has.
