(Happy) Easter ... for one or two!
A Happy Easter to all who celebrate the season.
The challenge for people who celebrate the holidays on their own (by choice or not) is not to overdo things while adding all the unique touches of the holidays to their tables.
Today's meal was thrown together in less than half an hour with the help of a microwave: baked beans made yesterday as part of a big batch, cooked ham from the freezer and thawed overnight, frozen corn and coleslaw from a pre-packaged mix. The bunny cake, which was my centerpiece, came from a local bakery and was enough for two after the large meal which preceeded it.
