One of the items in my freezer from this past June was a tray of 5 bone in chicken breasts ($7.34 for 1.774 kg). Unfortunately, I hadn't broken up the tray, just double bagged it into a large freezer bag and tossed it into the freezer for later. So, I had to thaw the whole thing in order to use it. But I didn't want to cook all the breasts in the same way ... too boring.
I cut each of the breasts in half, baked some, marinated and baked others and ended up with enough chicken for 10 servings:
1. Chicken with Campbell's mushroom rice (3 pieces) - baked
2. Chipotle in adobo and ancho chili marinated chicken (4 pieces) - baked/poached
3. Jamaican jerk marinated chicken (3 pieces) - baked
The chicken with Campbell's mushroom rice made a complete meal with some salad. The other 2 breasts/mushroom rice were portioned together and frozen away, ready to thaw and eat another day.
I made 4 chicken enchiladas with some of the chipotle in adobo marinated chicken and served them along with Mexican rice and refried beans
The rest of the chipotle in adobo marinated chicken breasts were sliced and thrown into "Chicken Tortilla soup". I had to supplement the meat with one of the jerk chicken breasts to make up to 2 cups of chicken meat. Recipe for this soup will be posted shortly. The other 2 jerk chicken breast halves were frozen for the future as I have too much on the go this weekend to deal with them.
