Sometimes when you have leftover mains and sides in your freezer you end up with a dinner plate that's a fusion of two or more cultures.
In this case, my Cajun 'dirty rice' was paired with a Mexican mole chicken and a very generic salad with some Greek/Italian roots
It all started with a craving for oven baked chicken drumsticks and mashed potatoes. By the way, the broccoli side dish is the result of microwaving the florettes for a few minutes on high and then pouring over some Kraft Zesty Italian salad dressing. Can you GET any lazier in your veggie cooking techniques? :)
A great meal, but I thought I'd finally use the braising liquid from the pulled pork, throw in some Dona Maria mole paste and see where it took me. This was the result.
Dona Maria mole paste
Red pulled pork braising liquid
Chicken Mole - about a cup of pulled pork braising liquid, 1-2 tbsp mole paste, leftover drumsticks (or thighs or breasts), baked for about 35-40 min at 350 deg F until the chicken is tender enough to fall off the bone
Chicken Mole Dinner - Chicken drumsticks simmered in mole sauce, dirty rice and Italian dressing 'Mexican' salad with queso fresco (or feta) and diced avocados.
Chicken Mole Wrap - Wrap the shredded chicken and dirty rice in corn tortillas 'enchilada' style or in flour tortillas 'burrito' style. Decorate the wraps with sour cream thinned with some creme fraiche.
