Picspam - February Recipe Clearance

I'm clearing out some pictures from my camera hard drive so here is an assortment of meals/dishes that I ate in February that didn't warrant posts of their own.

Hee, I made coconut macaroons the other day, too! I also added chopped almonds, and I added chia seed to about half the batch as an experiment (yay for upping nutritional content of cookies).

Huh, I have never had a problem with macaroons. I use unsweetened coconut, 3/4 cup sugar, 2.5 cups coconut and 2 egg whites. This time I only had 2 cups of coconut so I added a half cup of almonds - I should have reduced the sugar for it was a little overly sweet, but not bad.

The only shredded coconut that I had was 2 small packages of the sweetened stuff. I reduced the sugar but I don't think that was the problem. Maybe I should have let the mixture sit so the liquid could soak into the coconut first.

The macaroons were actually a fail. Most of the egg white/sugar mixture oozed out during the baking. I tried to scrape it up and add it back to the individual macaroons but they still ended up dry and chewy. I don't know what the problem was. :(
