Molten Chocolate (Lava) Cake for Valentine's Day

This easy lava cake recipe comes from one of Rachael Ray's programs. I've made it successfully several times in my pre-camera days but, in the interim, I have a new stove and its baking is a bit temperamental. So, I thought I'd try half the recipe to test things out. We've had a lot more snow and cold than in previous years. I'm ready for the winter to be over and done with. Days in which there's some sun are a nice treat. :)

This is probably my favorite dessert. I like it for the taste, the texture and because it can be ready in a jiffy. A scoop of ice cream alongside it and I'm in heaven.

I have always found the English name so unjust for this gorgeous beautiful cake! Molten already sounds so much better... In French it's fondant au chocolat and it sounds so good... whenever I see it at the menu it's always hard to resist (many restaurant serve such individual cakes). Your mini cakes look beautiful! It's a lovely cake though very rich so I can understand why you'd want to split one after a romantic Valentine's day dinner. :)

I love the look of this cake, Marie and it looks so rich and decadent and I love the look of your 'lava'. And the marmalade sauce would go so well with the rich, dark chocolate. I know my husband would love this. xx http://hotlyspiced.com

The tangy taste of the marmalade offset the richness of the chocolate. I'll probably make another batch on Sunday or Monday (Family Day so I'm home all day) which should be appropriately 'lava' like in texture.
