Two Chinese Dishes in Progress

Over the last few weeks I've experimented with a couple of Chinese dishes. Although they didn't turn out QUITE as I had hoped, they were edible and, when I have some free time for experimenting, I'll work on improving my results.

They weren't bad for a first attemp. Next time, I would reduce the salt to 2 tsp instead of the 3 tsp that the original recipe called for.

We don't usually do salt at all. Do you think I could bring it down even more?

The recipe said to start with 3 tsp of salt and sprinkle some over each pancake along with the green onions before rolling up the pancake. I decided to add the salt to the flour so as to ensure each pancake got an equal amount of salt. I found the resulting pancake saltier than I liked so I would use 1 1/2 - 2 tsp per the 3 cups of flour next time.

I suppose you could use a pinch of salt 1/8-1/4 tsp per pancake according to your taste. I do think you need some salt however so I wouldn't eliminate it completely.

You made green onion pancakes! That's my favorite! I really want to make it from scratch one day... But I've been too lazy and keep buying those premade ones. I gotta start practicing! :D I'm so inspired by your pancakes!

Thank you. They weren't hard to make and tasted fine with hummus but they didn't turn out to be the flaky tender pancakes that I was hoping for. I'll try another recipe one day. :)

Woah nice one mate! Both are dishes that require a bit of careful work, so kudos to you for trying to make them from scratch! there is a rice noodle roll recipe on my blog, an old old post - have a search and peek if you like! But even i am not completely happy with it yet- got to practise getting it even thinner! I have yet to try green onion pancakes- on my list for sure, I am so inspired now! :)

I was told to try another rice flour brand as my noodles didn't end up being the lovely glossy white noodles I get at the dim sum place. I'll visit your blog and see how your recipe compares to the 2 or 3 others I have saved so far. :) I will definitely work on a thinner noodle and leave out the fillings next time.

Your dishes sound and look wonderful Maria. I adore rice noodles so the rolls would be right up my alley. The green onion pancakes also look mouth watering, I really love how fresh a green onion can make anything taste - it's my wonder garnish!

Whenever I buy a package of green onion, it goes bad before I get a chance to use it so I was happy to use up the tops in this pancake recipe. Now I just have to use up the bottoms ... maybe in this aloo keema curry.
