Firing up a bbq just for one or two things seems so wasteful, even if I'm cooking for one not a whole family. So I make it worth my while. (ETA: And some of the dishes hadn't been photographed when the recipes were originally posted back in July, while I was camera-deficient. That omission has been corrected.)
The items below will feed me for a week with only a few additions. :)
Back Row - sweet potato couscous, chicken drumsticks and mixed rice, grilled corn on the cob
Front Row - tawook (chicken) and ground lamb skewers
Supper #1 - BBQ'd drumstick, mixed rice with chicken gravy, grilled corn cut off the cob to make for neater eating ... and salad. Cause you HAVE to have some salad. :)
Ground Lamb Skewers - I used some finely minced fresh Greek oregano and rosemary in the ground meat mixture this time for a flavour boost
Tawook (Chicken) Skewers - the marinade is a snap to make with ingredients you'll already have in your fridge/pantry
BBQ corn on the cob - drizzle some melted butter over the top and sprinkle some paprika or cayenne pepper for colour and you're all set. At 6 cobs for $2 they were a good deal and I can save the kernels for another day. :)
Chicken drumsticks and mixed rice - I would have made more rice but 1/2 cup was all that was left from my last trip to the bulk food store.
Sweet Potato Couscous - cubes of sweet potato baked in the oven til tender, 1/4 cup of rehydrated cranberries and some toasted sliced almonds
