Weekend musings ... cameras and chicken stock

After a month of being without a camera, I'm making up for the absence by cooking dishes I had been planning for a while and taking way too many pictures.

I find that I generally focus on dishes from a particular country and for the last couple of weeks my focus has been Italy with a beef shin/shank ragu, potato gnocchi, pea and prosciuttto risotto and arancini. I've switched over to a new country and tomorrow's post will introduce a dessert and a soup from that country. There's another dessert that I want to do as well since I have the basic ingredients available.

In the meantime, today's supper was a comfort plate of dishes that don't require a recipe and are made up of commonly found pantry ingredients. Roast chicken drumsticks (I put back the larger drumstick so I'd have room for dessert, roasted potato wedges, chicken gravy, to dip the wedges into, made with pan drippings from the drumsticks and some of my home made chicken stock, and a BIG serving of salad.

(I made 21 cups of chicken stock last week and the remaining 15 cups are waiting in the downstairs freezer for future dishes.)




I'm going to leave a place holder for the dessert since it's related to tomorrow's post.

ETA: 08/05/2013 Semolina custard with a garnish of toasted, sliced almonds and a sprinkle of cinnamon. Some of the cold syrup poured over the galaktoboureko can also be drizzled around the outside of the custard if you want a sweeter taste.
