They look amazing!!!! As you say, often the leftover tricks give even better results than the original dish. I am already hungry (your inside photos are just too much!). I love arancini but only those filled with something (as I have mentioned my favourite are with ragù but since I never have leftover bolognese ragù - it's just too good - I have never prepared them). I must try your version. Sissi

Thank you. I almost put some arancini on a plate and ran next door to my Italian neighbour so I could share the wonderfulness. :)

Next time you make some bolognese, double the recipe and put some aside in your freezer for this. You don't need much as you know. I'm going to defrost the last of my potato gnocchi to pour over the leftover ragu from the arancini.

Well made arancini a lip smackingly delightful and these do look it! I've had bad ones where the rice dried out in frying. Your fillings sounds delightful Maria.
We've been away getting into trouble with a famous blogger in Chicago, stay time on Monday!

I was amazed at how many different forms of risotto there are. Seafood, asparagus, saffron ... one day. I just wish deep frying the arancini wasn't so much work and mess. I was going to try shallow frying them but they were loose and I was afraid they would break up while turning to get every side done.

Your arancini balls look incredible. I love these. I made some once for a wedding that I was doing the catering for - they were very popular xx http://hotlyspiced.com

Thank you. They're fiddly but worth the effort.

Zsuzsa here.

Yey you have photos! Seems complicated with many steps, are you sure it wasn't me? ;-) But seriously, these must have been fabulous!

I was happy to get my camera back so it was time to take lots of pics. It IS a bit fiddly having to make the balls, fill, flour etc and then deep fry but they were very good.
