Arancini ("little oranges") are fried rice balls made with leftover risotto and may be filled with small cubes of cheese, meat ragu and cheese or even left plain.
They look amazing!!!! As you say, often the leftover tricks give even better results than the original dish. I am already hungry (your inside photos are just too much!). I love arancini but only those filled with something (as I have mentioned my favourite are with ragù but since I never have leftover bolognese ragù - it's just too good - I have never prepared them). I must try your version. Sissi

Next time you make some bolognese, double the recipe and put some aside in your freezer for this. You don't need much as you know. I'm going to defrost the last of my potato gnocchi to pour over the leftover ragu from the arancini.

I was amazed at how many different forms of risotto there are. Seafood, asparagus, saffron ... one day. I just wish deep frying the arancini wasn't so much work and mess. I was going to try shallow frying them but they were loose and I was afraid they would break up while turning to get every side done.

I was happy to get my camera back so it was time to take lots of pics. It IS a bit fiddly having to make the balls, fill, flour etc and then deep fry but they were very good.
