Bucket List Challenge - Whole Chicken Ballotine

I'm not sure if boning an entire chicken, stuffing it with a combination of cooked rice, sauteed mushrooms and spinach, tying it up with kitchen twine and then baking it is on my bucket list of things I want to cook ... but it sure should be. Thank you for commenting, Sawsan. I'm not as capable in many fields of cooking as you are but every once in a while, one of your posts makes me think I could do it ... I'm glad it worked too. :) I liked that the results were a very economical way of serving chicken and people could get their choice of white or dark meat without dealing with the bones.

What a lovely dish, I was intrigued when I saw that post on Sawsan's blog too. I'm not a huge fan of touching raw chicken, but it looks like it may be worth it for this recipe. You've done a lovely job in tying it up; that technique is certainly a good one to master, we use it all the time on Pork Tenderloin.

Thank you. I worked in a lab operating on mice so chicken etc are no big deal to me. I was lucky to have picked up a couple of balls of kitchen twine at the Dollarama a while ago, so I had everything I needed.
