Moo shu hoisin duck pancakes

Although it's only half the size of the 12 pound turkey I cooked last year, this duck is going to be another bird that's going to ... keep on giving.

Here's something to do with five slices of leftover duck breast when you've got some flour tortillas and hoisin sauce in your fridge.

I removed the skin from the sliced duck and rendered some more of the fat in a small non-stick frying pan. The result ... a crispy strip of crackling similar in texture to Cheetos cheese puffs.




From top to bottom: sliced duck breast meat in hoisin sauce, baby arugula and crispy duck skin wrapped in a flour tortilla




Paired with the soup below, you've got a great light lunch.
