I am often inspired by recipes posted on the blogs I subscribe to but I don't always follow them. Not because I don't think they're probably great but because, in spite of TRYING to be organized, I'm not always successful ( Read more... )

I love that you were inspired by my post Maria, that is the goal of blogging, and I'm thrilled that with the modifications and substitutions it worked out to your taste. I think I'll adapt some of your ideas next time, I think the dried peppers would add an enormous amount of flavour, and I'll definitely nix the enchilada sauce! Great recipe!

Inspiration to try new cuisines and techniques and challenges to improve my own posts and recipes .... all important things I get from the blogs I subscribe to. It's nice to be able to share in return as well. :)

I wish the picture could have been better but the glare off the soup was impossible to avoid with the necessary autoflash setting at 5pm when it's dark outside already.

I bought the 2 kinds of chilis at a Mexican grocery store because I'd heard of them but never tried them out. At $2.50 for a small bag, it was worth the price.

I've used the anchos before to make something called a Fire and Ice Sauce as an accompaniment/dip for beef empanadas. Instead I used it as a sauce inside some chicken fajitas. I lost a number of the pictures I took around that time so I'll have to make the empanadas and sauce again.

I think the guajillo chiles would be great as a base to an enchilada sauce instead of buying the commercial stuff which isn't so good.

Dear a-boleyn

Whilst presentation is important in food, I find that cooking comfort food at home need not be elaborate and as long as it tastes delicious and satisfy the cravings, it's good enough for me. Looks like a delicious recipe and thanks for sharing.

Thank you for the compliment on the recipe. I DO want to improve the look of my posts though since, the cliche saying 'we eat with our eyes first' has more than an element of truth in it. :)

I agree. Still, there are a few changes I'd make and it might have been a bit hotter though it had lots of flavour. I think some cornbread to go with it would be great too. Haven't decided on cheddar cheese and jalapeno or bacon and green onion or some other combination.
