Me and My Turkey - Post #7 / Mexican Cooking Weekend 2

After I made this post, I realized that it was also part of my "Me and My Turkey" series so I've edited the post title to reflect that. It uses up the last of the turkey breast from my freezer.

It's not a feast without the appropriate beverage however, other than the pineapple Jarritos on the first day, there was no Mexican beer, not even a Corona or Dos Equis in sight. Since I served the last 2 bottles of Jarritos (strawberry and guava flavours) to my company earlier Sunday I only had water with my supper. So sad. :(

That would be great. Then I'd have an excuse to try out new recipes. :) Churros and chocolate all around.

Is there no end to your pantry and freezer? You seem to be the best stocked person in the world. I'm at the shops everyday because we're always running out of things. Love the look of your turkey wraps xx http://hotlyspiced.com

Thank you for your compliments but, of course, I run out and am still tempted when I go to various grocery stores. There are lots available locally.

It seems that I haven't touched most of the stuff in my pantry/shelves and my freezer seems to be filling up not going down. :) That's why I gave myself a 6 month deadline. Hopefully, I'll be cooking more as the weather gets cooler.

This is most/not all of the stuff in my pantry (fridge, freezer and misc shelves) as I seem to be finding things I misplaced pretty regularly.

I was just thinking about how your quest to empty your freezer and pantry were going Maria, I just kept forgetting to ask. We love Mexican and JT always orders a mole sauce when we go out; the mole verde looks like a lovely lighter alternative. I adore the addition of avocado, it just makes the dish so special. I'll have to incorporate Mexican into our meal plan next week as this weeks is already purchased.

A few things were used up, but then I bought a few other things so not that much progress, but I'm trying. :) I like avocado a lot and it's useful in several cuisines.

I can forsee the meat in the freezer being used up eventually so that's a good thing. First though, I have to eat the meals/dishes I MADE with the things I pulled out.

Apple empanada! I've seen empanada recipes on food blogs but I have never made one myself. Looks good, and I love your apple filling. We had Mexican food over the weekend too. It was perfect fulfilling meal after 1.5 hrs of hiking (which means all my calories I lost is just replaced by the yummy food!).

I agree that Mexican food is not necessarily low-calorie. I tried by making my own refried beans from scratch and using very little fat to 'refry' them, but then used up left over grated mozzarella (from the pizzas) on the enchiladas etc. :)

The filling was just canned apple pie filling from my pantry ... the real experimentation was the dough.
