So, it turns out I am a BAKING GODDESS. This works out conveniently since everyone loves warm, sweet things that come out of the oven! The last thing I attempted was cinnamon rolls and this was indeed fun. The icing was also fantastic, I modified the recipe though to reduce the amount of butter and increase the amount of sugar. End result was success all up in my mouth hole.

OK, so these are the things I've made so far:

Banana Blueberry Muffins
Spiced Blackberry & Raspberry Muffins
Pumpkin Cheesecake
Cinnamon Rolls w/icing
Blackberry Crumble
Chicken & Mushroom Pie (made with Quorn "chicken" of course)

The Quorn chicken & mushroom pie turned out AMAZING, I even made my own short crust pastry for the bottom of the tin and top of the pie. The cream sauce really moistened the Quorn pieces well and all the flavours were infused nicely.

This weekend I want to make something different. I have some things in mind on both the sweet as well as savory side.

On the sweet side:

Cherry Ricotta Muffins
Pineapple Upside Down Cake

On the savory side:

Salmon & Spinach Muffins
Sweet Potato, Spinach & Feta Parcels

There's a concept floating around in my head about creating a vegetarian cookbook. There are a lot of cons at the moment since I don't record the formulas for the meals I've made, not to mention the time and costs involved. However, it's still appealing as a personal project, even if it doesn't result in profit.

Anyway, this brings to mind something I read in the paper the other day. Paul McCartney wants the UK to adopt a "Meatless Monday" routine - and I think it's a great idea!
