days 20 & 21
i'm not sure if uni students can afford to have hobbies anymore. O_o but supposing i had the time, my hobbies would be reading, writing down random things in my sekrit journal, watching TVB shows (which i do regardless of whether i have time XD), and more recently, postcrossing (received a postcard from the Netherlands today!).
i'm not really into baking or cooking, but it can be fun when doing with friends sometimes. last term we randomly decided to bake one night, & each of us made something hahah. i made PB cookies cos it was the easiest & the recipe was on the PB jar. XD anyway this is a recipe is for strawberry & banana split "cake". "cake" is written as such cos it's not really a cake. as in, instead of baking it you stick it into the freezer. wahah. i made this a few times last last summer & it tasted pretty good. of course, it's impossible to go wrong with chocolate chip cookies & ice cream. :D
ingredients:
24 CHIPS AHOY! Cookies, coarsely crushed, divided
3 Tbsp. butter or margarine, melted
1/2 cup each: sliced strawberries and bananas
1 qt. vanilla ice cream, softened
instructions:
RESERVE 1/2 cup of the crushed cookies. Mix remaining crushed cookies with butter; press firmly onto bottom of foil-lined 9-inch square pan.
TOP with fruit; cover with ice cream. Sprinkle with reserved 1/2 cup crushed cookies.
FREEZE at least 4 hours or overnight until firm. Cut into 16 squares to serve. Store leftover squares in freezer.
TA DAAAH! easy right? and it's good. :D
anyway, i'm going back to HK next week (Thurs-Sun) cos my grandfather died last week. his death wasn't unexpected, because he was in a nursing home since last year & was pretty much bed-ridden. i was hoping it wouldn't come to this, but my parents want me to go to "represent" my family (cos my mom/bros can't go for various reasons). so yeah, missing 2 days of classes & traveling for 30+ hours in the span of 3 days. not fun at all. but at least it's only the second week of school so i won't be missing much. i do tend to jetlag like crazy though, so i dunno what shape i'll be in when i get back. O_o my cousin is also going back from England, so we can be @________@ together i guess.
