Pectinase

does anybody have any idea where I can get the enzyme kinetics numbers for Pectinase? We have a program that we use in our intro biology lab that will let you custom design enzymes -- I'd like to do pectinase, since the rest of the lab exercise is using real pectinase and applesauce!

I've been hunting for a couple of months now, with no success.

I tried everything. I even found a book (via google scholar) that was apparently the proceedings from a conference on pectinase -- but it was fairly worthless: no index! :-(
