But, what DO vegans eat?

It's time for the obligatory holiday post!

Usually I work on Thanksgiving, which honestly I don't mind at all since it's such a very lucrative day, but this year I was off on Thursday and no one wanted me to cover them. I feel kind of badly, because my mom was doing a thing at her house and she's only an hour drive north of here but I really hate driving during the holidays and I see her once a month anyway, in fact she's driving down to visit me next week, so I decided to stay home and have a really simple Thanksgiving with Forrest.

It was actually a lot of fun. I made us pancakes with vegan (soy) bacon strips in them for breakfast. Then we went for a nice long walk and even though it was chilly and lightly raining it was really good to get out of the house and get some fresh air.

Now I'm usually the chef between us, although forest is a decent cook, but I love cooking and baking and eventually hope to open up my own vegan bakery one day. Generally in our home I cook all the meals, this is also due to our schedules, and he's in charge of washing dishes. But since we were both off all day we decided we cook the meal together and it was a lot of fun, even though I did treat him mostly as my sous chef.



The feast:


We made a vegetable loaf consisting of white beans, tofu, sweet potato, carrots and onions, and oats with lots of tasty herbs like rosemary sage and parsley:


We also had some sliced bread with vegan butter jellied cranberry sauce (the only not homemade items) and orange glazed carrots:

Here is our baked sweet potato mash topped with chopped pecans and coconut sugar:


Here's our classic mashed potatoes with of course a side of mushroom gravy:




Here's our maple roasted brussels sprouts topped with shiitake bacon… That's right, "bacon" made from finely sliced shiitake mushrooms that are marinated and then roasted until nice and crispy:


I didn't snap a photo of it unfortunately, but we finished the meal with a delicious chocolate pecan pie.

I think that likely answers the question I often get (but not from you guys, of course) about what do vegans eat?

I hope you all had a lovely holiday. Personally I'm not a big fan of holidays in the sense of the commercialism and cultural appropriation they tend to represent but I love to cook and I will find any excuse to make a grand meal.
