my favorite vegan recipe

Because LJ is for sharing, right?
Time: 15 minutes
Ingredients:
-2 cups brown rice/pilaf (Kashi's 7 grain pilaf pouch is awesome and easy)
-2-3 stalks celery chopped
-1/2 cup raisins (I like Newman's own better than Sunkist)
-1/2 can of mandarin oranges

1. Instead of microwaving pouch, put it in a small/medium sized pot.
2. Add about 3 tbsp of the syrup from the mandarin oranges.
3. Heat on low/medium for about 5-7 minutes until most of the liquid is absorbed.
4. Remove from heat
5. Add raisins and celery and stir
6. Serve and garnish with oranges (I break them in half because otherwise they overpower the other flavors)
7. Enjoy!

This recipe is really easy to tweak too, you can add apples, carrots, dried cherries, almonds, walnuts, etc.
