It's been a while, so to let people know I'm still alive, I thought I'd share a winter dish with you all...



Contains: Kumara, onion, potato, carrots, whole garlic cloves, green capsicum, butternut pumpkin, sweet corn

Basted with: Canola oil, salt, pepper, marjoram, mixed herbs, dried rosemary, lemon juice.

Into the oven!



40 minutes later, checked and turned/basted:

Nearly done!



10 more minutes for browning.



Total cooking time including preparation, 2 hours, 20 minutes in amongst burning DVDs and watching junk television.

The plate on the right is my late-night snack. The plate on the left is leftovers. mmmm leftovers... they'll make me delicious and healthy sammiches for the next few daze, and feed the lass if she feels like tucking in. Hey, she made me soup tonight. Good, nurturing soup.
