Can you eat apples on their own? If you can, you can make it without additional sugar. I only added sugar cuz Matt likes it :) Also, as Matt suggested, you could splenda that shit up instead.

I can eat apples on their own, but only like one. I tried making a strudel once and substituting splenda and it totally tasted awful. Sometimes, you just can't use splenda in recipes, it's ruined a number of my cookies too.

What if you did like an apple cranberry strudel? Cranberries aren't as high in sugar are they? Or how about something like Baklava that doesn't have the fruit.. just a swettened nuts and bread crumb mixture between layers (you'd have to roast the nuts and toss them with the splenda to make it sweet, then sprinkle that mixture between the layers. Hmmm. Maybe I'll make it my mission to develop a sugar free strudel-esque treat for you. :)

Cranberries are actually higher in sugar content than apples. I think the baklava idea might work. Truthfully I have stopped baking and trying to make sugar-free sweets (even though I really enjoyed baking) because I just can't justify the fat intake and unnecessary calories. I'm really very strict about that sort of thing (like I'm turning into a food Nazi). Like I've said before I try to keep my total daily caloric intake below 1500 calories (most days lately it's been in the 1300 range) and even sugar free desserts would put me way out of the ball park for that. But thanks for the suggestions and for being considerate enough to try inventing tasty sugar-free treats :)
