Xbox 360 queries...

I have decided to take the plunge into buying a decent console. We have decided that an Xbox 360 is the way to go.
Questions for the console savvy amongst you.
1) Is the new black S console any better than the old white core console in noticiable and quantifiable ways that justify paying the extra?
2) Main purpose of the console is to play Rock band and similar games such as DJ hero, and to feed my hunger for decent FPS and racing games that my increasingly aging laptop won't cope with. Bearing this in mind, is it worth plumping for the 250 gig, more expensive console?
3) Any ideas as to best bundle deals, bearing (2) in mind?
