Wednesday Word: Pikelet

Pikelet - noun.

It's possible to confuse a pikelet with a pancake or a crumpet, but there are key differences. All three can be made in a frying pan, but a crumpet is made with a ring to keep the circular shape. A pikelet is thicker and less flat than a pancake.

Pikelet is an Anglicized version of the Welsh for "pitchy bread", bara pyglyd.

I wanted to share a recipe for pikelets with this post, but the variety of comments on the different recipes made it hard to find an authentic version. I'll let you Google it and whip up a batch for yourself!
