In order of preparation:
Pumpkin pie made by
onecrazymother while I was out of town on business.
2 of Mom's Apple Pie:
4+ lb tart apples (granny smith or breaburn), peeled, cored, sliced, and individually de-hulled.
1-2 tsp lemon juice
2/3-3/4 c sugar
1/4 tsp nutmeg
1/8 tsp salt
1/2 tsp dry lemon rind
1/2 tsp cinnamon
1 Tbsp butter
Make crust, preheat oven to 425. Combine juice, sugar, nutmeg, salt, lemon, & cinnamon (sugar and lemon are balanced to tartness of apples). Layer half of apples into pie, then half of mixture, then rest of apples, then rest of mixture. Dot pile with butter & cover with top crust. Cut holes for steam to escape. Bake to for 40 minutes @ 425 until apples are tender.
McHourse D'ovures
Two hard boiled eggs, quartered
1 sausage, browned and chopped in olive oil with a clove of chopped garlic.
4 tbsp shredded cheddar
1 package crescent roll dough.
On each of four triangles of rolled dough, put two quarters of egg, 1/4 of sausage mixture 1 tbsp shredded cheddar. Cover with another triangle of dough and pinch together. Bake at 350 for 12 minutes. Cut each into quarters. Count your fingers after serving: it's delish and new this year.
16 lb Turkey
Rinsed, stuffed (pepridge farm brand noting added) and then put loosely tented with aluminum foil into a 200 degree oven for 16 hours. Brown at 300 for five minutes. Get as many spatulas and wide spoons under the bird as possible and transfer it to the serving plate. You need a lot of support during the transfer because the bird is tender enough to fall apart: this year both wings fell clean off: the humerus bones fell out completely free of the meat.
Roast Cauliflower
two heads of cauliflower cut into bit sized florets. Mix with 1/4 cup olive oil, and about six cloves chopped garlic. Roast for 40 minutes at 425, turning once. Remove from oven and add about 1/2 cu shredded cheddar.
Sausage Shroom Chop
3 medium onions chopped fine.
1 tbsp bacon drippings
~3 cloves chopped garlic
3 links turkey sausage (1/2 lb)
1 lb sliced mushrooms.
Brown onions in drippings with a bit of salt. Add garlic & continue to saute for 1 minute. Add chopped sausage meat & brown. Put in mushrooms and use spatula to chop mixture fine while cooking out all water.
Cheesey creamed spinach.
1.5 tbsp bacon drippings
1 tbs butter
2 cloves chopped garlic
2 tbsp flour
salt & pepper
~1/2 cup half & half
1.5 cup shredded cheddar cheese
3 packages block frozen chopped spinach.
Microwave spinach and squeeze out water. Melt drippings and butter. Add garlic, flour and salt & pepper and stir into roux. add half & half. adjust to desired thickness. stir in cheese and heat until blended. Add spinach and stir.
Fresh cranberry sauce:
1 cup water
1 cup sugar
1 pkg fresh cranberries.
Boil sugar and water: add fruit and simmer for 10 minutes.
Yams: 1 big can, mashed up with mini marshmallows on top & baked.
4 lb yellow potatoes, peeled and boiled. 1-1/2 sticks of butter & two cans of cream of mushroom soup. mashed.
