Lalvin D-47 is now my preferred yeast for mead. It's bionic.

Updates on this weekend's batches:

Batch 16 - Explosive Orange Blossom

It's calmed down... a bit. I left the cap off the airlock all last night. This morning I:

- Took off the airlock and gave it a good cleaning/sanitizing.
- Washed all the sticky crud off the side of the carboy with Dawn.
- Washed the sticky crud out of the bucket that the carboy is resting in.
- Used a sanitized airlock brush to wipe as much of the dried krausen from the inside of the carboy as I could without touching the must (there's about two inches of air space in there).
- Re-attached the airlock.

That was about two hours ago. The krausen has already foamed up into the airlock again, but hopefully it will remain contained. It's near an open window, so maybe the cool air will slow the fermentation a bit. I never thought I'd be trying to slow fermentation, but sheesh. That is some stinky, sticky goop.

Batch 17 - Clover Honey Mead

Fermentation is off to a great start. No krausen, but the airlock is blooping 2-4 times a second. It's also near an open window, but I have it wrapped in a wool blanket.

16: orange blossom mead, 17: clover mead
