A weekend of brewing comes to an end. I'm relaxing with a glass few glasses of mead.

16 pounds of clover honey from Gunter's Apiary
5 gallons of bottled water for a 3.2#/gal ratio
2 packets Lalvin D-47 yeast (which worked wonders on the last batch)
6 teaspoons yeast nutrient
3 teaspoons yeast energizer
Process
11:15 = Honey and one gallon water on high heat. Moderate scum, clean. Saved it for honey butter.
11:38 = Hit 140 degrees, turned heat to low.
11:49 = Topped out at 148 degrees, turned heat off.
11:59 = Poured it into the carboy on top of three gallons of very cold water and nutrients, then added another gallon of very cold water.
12:08 = Pitched yeast at a cool 75 degrees.
