Theory on personality changes due to being the Sakurazukamori
Subaru's change to Sakurazukamori occurs late in the X/1999 manga and is never actually touched upon in the anime. According to what is known, whoever kills the current Sakurazukamori becomes to next one, ensuring that the title is never lost. Considering how nearly impossible it is to kill an onmyouji assassin skilled in dark arts, the next Sakurazukamori is usually already arranged by the family (from what is known, only the Sakurazuka family, of which there are many different ones). This is shown in a side-story of the X/1999 manga, where Seishirou Sakurazuka kills Setsuka Sakurazuka, his mother, who was the 12th Sakurazukamori. This made Seishirou the 13th. His mother put up no resistance, as the entire murder was very clearly planned out.
Because of Hokuto's "mirror spell" (of which Seishirou had full knowledge of), Subaru ended up killing Seishirou, which was not what he intended. It's believed that, simply because of Seishirou's death by his hand, the title of Sakurazukamori was passed on to him, making him the 14th. In the anime, this is never brought up, and in the manga, it's believed that he truly became the 14th after accepting Seishirou's eye from Fuuma. The title may very well only be passed on if the person accepts it and the fate that it brings.
Training to become emotionless was what Seishirou went through, as did Subaru, through the nine years of searching and lament he went through while searching for the assassin. Since, in Luceti, Subaru simply had the eye switched without his knowledge, his alignment as a Dragon of Heaven was also switched to being a Dragon of Earth. Personality changes are noted (mostly in the anime) when one becomes a Dragon of Earth, so the already fairly cynical Subaru has become even more so, with even less emotion or care for others. Although, Subaru isn't a true cynic -- he's more of less that way about 90% of the things about life, but he still holds out hope for some things.
However, as many can tell, Subaru is not being an emotionless or uncaring person to most. Most of his reactions to things that would make others angry or sad seem almost calm or cold, although he does what he can to word his thoughts in a way that can show that he truly does feel something about a situation. Subaru has gotten angry before while being the Sakurazukamori, but every time he has shown an emotion, it was due to one of two people: Seishirou Sakurazuka (whom he still considers to be "special", no matter how much hatred he has for the man) and Hokuto Sumeragi (his twin sister). Whether or not he would show real emotions (not just small flashes of them, as he does for some) for another resident in Luceti is unknown. Currently, the closest candidates for that would be Kamui Shirou (due to the connection they had in their world) and the vampire Subaru from Tsubasa (due to the innocence he possesses, which reminds him of his past self).
While he is both the Sakurazukamori and a Dragon of Earth, Subaru still has a will to protect and help others. It isn't nearly as strong as it once was, and it is mostly linked to any situation his sister may be in (or may scold him for not being part of), but that will is still there. He still has little to no care for his life, but once he realizes that Seishirou has disappeared again and will not be coming back (maybe), then he may take on the defensive -- preserving both his life and his memories of Seishirou, as his death would be the end of all of those memories. With there being no true death in Luceti, Subaru originally didn't care at all whether he lived or died, since he would just be resurrected, but with Seishirou gone, the fear of losing his memories of the older male will soon be instilled. He may still risk his life for someone he cares for, or to do something that others may consider suicidal, but that fear will always be at the back of his mind, and he may make a move to save himself at the last moment.
Subaru still has flashes of kindness and even happiness behind his emotionless explanations and insights about Luceti, life, and those around him. It's more or less the words and reactions of others that trigger them, which is why they tend to be so rare. If one simply considers Subaru to be emotionless and makes no effort to trigger an emotion like that, he'll simply continue to be emotionless to them. There are only a few people in Luceti who are able to trigger Subaru's practically hidden emotions. Currently, besides Kamui, TRC!Subaru, and Hokuto, they are Norma Beatty, Soujirou Seta, Usagi Tsukino, and Rena Ryuuguu.

▼ Hokuto Sumeragi ▼ Being that she is his sister, and his twin at that, she will always be someone Subaru will go to and confide in. He may hide things from her and may seem overbearing with the way he protects her and practically monitors who she speaks with, but it's only out of fear of losing her again. That fear is now doubled due to her death by Diavolo's hand, once again right in front of his eyes and once again with him having no way to stop it. He does feel as if he's becoming too overbearing, but he can't help wanting to make sure his sister stays safe. He feels it's the least he can do for not being able to save her the first (and second) time.
▼ Kamui Shirou ▼ Due to their similar experiences in life, Subaru automatically felt connected with Kamui. In Luceti, he does feel a bit distanced due to various reasons, but he still cares for Kamui and wishes for his safety and happiness. Since the younger boy has apparently found that happiness already, Subaru is determined to protect Kamui and keep him out of any dangerous situations he can, figuring that at least one of them should be able to be happy. Subaru will never admit this to Kamui either, as he feels the boy won't take it well (more like knows). His explanation as to why, should the boy ever find out, won't make Kamui much happier about it all either.
▼ Norma Beatty ▼ Honestly, Subaru couldn't stand the girl in the beginning. He first meets her during a fairly confusing time in his stay at Luceti, and she (while he's sure she had good intentions at heart) did nothing more than aggravate him by calling him a nickname -- "Pirate", which came from the fact that his right eye was covered with bandages at the time. Eventually, the girl picked the wrong time to have the same enthusiasm his sister always gave off, causing Subaru to break down and unintentionally mention his feelings about his sister's death in Luceti by Diavolo's hands. Because of this, he decides to call the girl a nickname as well -- "nee-san" or "sister", due to how similar she acts to Hokuto. While she does still annoy him a bit, her similarities to Hokuto are causing him to slowly start watching out for and worrying about her as well. It won't be nearly as bad as with Hokuto, however.
▼ Rena Ryuuguu ▼ Subaru's initial meeting with Rena was mainly out of concern for the young girl being left alone during a storm. From then on, he began to become more and more concern about her welfare, especially after her strange episode during the Darkness Event. Seeing that she was still alone over time, Subaru invited the girl to stay with him. For some reason, her innocence seems to make Subaru feel much more at ease, and he genuinely enjoys being around her. If something were to happen to the girl, besides her being sent home, he would do what he could for her for certain.
▼ Usagi "Bunny" Tsukino ▼ Subaru didn't really have too many interactions with Usagi right off the bat, but he's begun to slowly warm up to the girl's bright personality. He feels as if she is someone he can count on, should he ever need assistance for something. Even though her attitude during the trip past the barrier during the "The End" event started to grind on his nerves a bit (mostly because she wasn't taking things as seriously as he thought she should be), he does know that she isn't like that 24/7 and is capable of being serious when need be. So, in short, he can tolerate Usagi's childish side, but not in large quantities, and would be willing to help her, should she ever need it. Update: Usagi has slowly turned into someone Subaru truly trusts, when it comes to talking about things that are on his mind or just flat-out bothering him. The fact that she said that he was her friend (even though it should've been obvious to him) meant a helluva lot more to him than he let on. He doesn't want to depress the crap out of the poor girl by flinging all of his angst on top of her, but as long as she's alright with it, he'll continue to confide in her when it comes to his problems.
▼ Soujirou Seta ▼ Subaru's feelings on Soujirou are ... complicated. Initially, he wanted nothing to do with the man and couldn't stand the fact that his sister was friends with him. He found him to be overly cynical in an almost taunting manner, which angered him fairly easily, especially since most times he did that to Subaru where times when he already WAS angry. However, when Hokuto first disappears from Luceti, he does grow concerned about the male. Considering the type of reaction he had to his sister's disappearance, Subaru decided to watch over and somewhat guide Soujirou if he could, at least in an effort to calm him until his sister returned, which she eventually did. Even when Soujirou attempted to kill him, Subaru merely kept him pinned down and did everything he could to avoid conflict and bloodshed, and on top of that, he didn't hold that against Soujirou. He still feels a sort of responsibility to speak with Soujirou when something happens to his sister, or when the male just doesn't seem to be doing too well. In short, while Soujirou isn't exactly someone Subaru entirely enjoys, due to their vastly different opinions of the world, he's still willing to speak with him when the need arises. In even shorter terms, he cares about him, but not enough to call him his friend.
▼ Subaru (Tsubasa) ▼ When Subaru heard that he had "another self" in Luceti, he wasn't sure how to take it. Seeing that "other self" being a vampire with Kamui as his twin brother was even more surprising. Subaru still isn't sure how he should really react to the other Subaru, but after a while, he wasn't concerned about how he should approach the other anymore. This "other Subaru" is very much like his younger self, so Subaru is willing to protect him and help him when he can. However, he feels as if the other Subaru knows nearly everything about him, while he knows next to nothing about the other Subaru. He isn't sure how he should go about bringing that up either. It's something he'll eventually question, but at the moment, he's content with just knowing his "other self"s personality.
▼ Haruki Suzumiya ▼ If there was ever a person Subaru has ever wanted to just take a good, strong swing at, it's Haruki Suzumiya. Ever since he first spoke to the boy, he's had a strange feeling that they would just ... not get along. Whether or not Haruki realizes it (which he probably does), Subaru doesn't truly hate Haruki perse` -- he just wants to smack him, at least once, and would probably throw a small party in private if the boy ever disappeared into the void or was swallowed by a grue or something. If anything, the boy should be proud about one thing; he does manage to make Subaru feel something. That something being severe aggravation, but damn it, it's SOMETHING. He has no idea whether Haruki contacts him JUST to get him aggravated or if the boy actually is trying to genuinely help him, but he really doesn't care. If Haruki does somehow manage to help improve his life somehow, he'd probably try tolerating his behavior a little more, but until then, Subaru really doesn't give a damn about him.
